Gluten Free Cupcakes

It has been such a long time! Summer keeps me SO busy. I hate lazing around the house and being listless, so I make a lot of plans and outings with people I enjoy being with. This, unfortunately, leaves little to no time for cupcakes and cooking, and when it does, I have no time to blog! BUT, now that I have my new spiffy laptop, and I don't have to use my slow prehistoric computer, I have more time to blog!

Anyways, on to my cupcakes!



I had decided to make gluten free cupcakes mainly because it was my friends birthday and he has celiacs. Therefore, he can not consume any products with gluten in them. I saw this as a great opportunity to try baking something very different from anything I had baked before! However, I know little about gluten free baked goods, so I cut some corners and cheated a little. Later when I feel more comfortable about my baking skills I will make some from scratch!


Ok, I used a gluten free mix from Betty Crocker. I added the ingredients and mixed.


The cupcake batter was like any other cupcake batter with one difference; the texture was more grainy. The taste, however was just like any other cupcake mix.



Once the batter is mixed and no lumps remain (Minding that the texture is supposed to be grainy), I poured the mixture into my cupcake tins. I Filled most of the tins about 3/4th of the way. Some were filled with a little less than that, some with a little more. This was because I was really unsure of how cupcakes without gluten would (or would not?) raise.





Lo, and behold they did raise! As you can see, they really didn't raise like cupcakes with gluten. they rose in little peaks! At first I was unsure that they were cooked all the way through, but with the help of a tooth pick inserted into one of these little guys, i realized that they were fully cooked. Another thing to keep in mind is that they do have different ingredients in them, so they don't turn golden brown like other cupcakes you've created before. In contrast, they stay a light pale yellow that isn't very different from the color of the batter before it is cooked.

Once they were cooled, I frosted them (if you are wondering, no, there is no gluten in frosting. no need to worry about that), and added sprinkles, and ta-da! All done!

Don't try this at home...

Hello, everyone! This past Friday was my friend Casey's Birthday! For his birthday, I decided that I would make him MINI rainbow cupcakes! sounds adorable, right? WELL. I'm here to tell you to NOT do it. Please, save yourself! Not only is it a MAJOR pain in the butt, but also, they just didn't look the same (I didn't take a picture, I was too frustrated). There just wasn't enough room to make nice layers of colors, and they ended up spilling over the edge of my pan a little. In short, I suggest NOT doing this. In the end, I made a bunch of cupcakes different colors. Which, I believe, is a very good option instead. So, I pulled it together in the end, but if you want to bake rainbow cupcakes, please do not scale down! Make them normal cupcake size, and save yourself back aching time. They are more vivid and stunning at a larger size, anyways.

To the dark side...

I'm sorry everyone. I have failed you all... I don't know what came over me. But, on Sunday, I did something that I may not be too prioud of....I crossed over to the dark side and made cookies. I know, I KNOW I'm SOO sorry! But I had promised one of my friends I would!
Anyways...on Wednesday I am shipping off to Europe, but the week I return, I will make it up by making cupcakes! I promise!

Rainbow Cupcakes!




Finally! I FINALLY have something cool to blog
about! Ok, so this week, i have made cup cakes. Here is a picture of the final result...

Pretty frickin' awesome, huh? i think so =] One of the best parts about making these, was the look on peoples' faces when they unwrapped them and saw that they were rainbow. Not to mention that they were really yummy.

Now. You may be asking yourself: "How did she accomplish such an amazing feat??"
my answer.....magic. =D
Actually, its all simply layering. And lots of patience, which i have.

First, make your batter, get your supplies ready, and have gel food coloring on hand.
Make sure you have as many containers as you do colors.

Evenly separate batter into containers and add coloring.
Layer colors in the cupcake cups (be sure to not to get too much batter on the sides of the cup),and then bake according to directions!
And then add frosting after they cool, of course.

Fin! Yummy cupcakes!

Although...one word of caution...this is a very time consuming project. I greatly discourage taking on these cupcakes if you have a deadline. Or doing them if you have a time restriction... or if you procrastinated on making them and need quite a few.

Back in the day, people ate much smaller quantities than we do now, so not only was making cupcakes relatively simple to make, but also they were ideal portion sizes.

Seriously, though...

In my opinion, cupcakes are a very important to our society. Think about it, who HAS NOT ever had a cupcake before? Hmmm? Exactly. Only total losers. Just kidding, but seriously...When you go yo a party, what is almost ALWAYS there? cupcakes. You can ALWAYS count on someone bringing in cupcakes to parties and functions. What better to bring family, friends, etc, together than cupcakes? they are food for the soul and make people smile.
